Ingredients:
12 large Organic Valley Omega-3 Eggs, hard-boiled
1 cup frozen Cascadian Farm peas, thawed and drained
1/4 cup celery, minced
4 whole scallions, minced
1/3 cup of mayonnaise
3/4 t curry powder
1/2 t paprika
Lemon juice to taste
Salt and pepper to taste

- In a large mixing bowl, combine mayonnaise, peas, minced
celery, scallions, and spices.
- Peel hard-boiled Organic Valley Omega-3 Eggs, rinse, and
chop into the mixture. Add lemon juice, salt and pepper to
taste.
- Mix well and serve with baby greens or as a super sandwich!
