Apple-Walnut Oat Muffins
     

Ingredients:
1 cup plain yogurt
Å cup water
1 cup rolled oats
2 egg whites
1/3 cup honey
1 cup whole grain flour
1 ý tsp. Baking powder
1 tsp. Cinnamon
ý tsp. Salt
ý cup crushed walnuts
1 apple, peeled and shredded

 

1.Preheat oven to 350. Grease muffin pan and set aside.

2.Combine yogurt and water, stir in oats and let sit for 3 minutes. Mix egg whites and honey.

3. In separate bowl, combine flour, powder, cinnamon, salt and walnuts.

4.Blend oat mixture into dry ingredients, stirring until moist. Fold in apples and fill muffin cups.

5.Bake for about 20 minutes.
