Broccoli Cottage Bake
     

Ingredients:
16 oz. Cottage cheese
10 oz. Frozen or fresh chopped broccoli (lightly stem if using fresh)
û cup soy or rice shredded mozzarella cheese
7 oz. Roasted red peppers, well drained & chopped
4 eggs, beaten
3 Tbs. each of soy grated parmesan style cheese grain bread crumbs

 

1. Preheat oven to 450 and oil a pie plate.

2. Mix all ingredients well and bake for 35-45 minutes, until center is set.

3. Cool 10 minutes before serving. Can be served for breakfast with fruit or a muffin, at lunch with veggie sticks & pretzels or at dinner with rice pilaf and salad.
