Recipes - Tofu & Herbs with Pasta

Ingredients:
3/4 lb. herb tofu
1 box of Debole's Linguine
1 tablespoon chopped garlic
1 tablespoon chopped shallots
1/2 tablespoon Italian Rose Pesto
1 medium size lemon
1 can Hain Vegetable Broth
1/2 teaspoon sea salt
1/8 teaspoon Frontier Black Pepper
1/4 cup chopped parsley
1/3 cup chopped green onions
2 pinches Frontier Crushed Red Pepper

 

Cut tofu into 1-inch squares. Brown on medium high in canola or olive oil. After browning one side and flipping tofu, wait one minute and add the following ingredients:

1. garlic and shallots (wait approximately 30 - 45 seconds)

2. vegetable broth, pesto and lemon juice

3. lower heat and let simmer approximately 2 minutes

4. salt, pepper, red pepper, parsley and green onions (stir well)

5. serve over prepared pasta

Serves 3 - 4
