| Ingredients:
4 whole wheat pita pockets
1 C chopped avocado (1 avocado)
1/2 C shredded Romaine lettuce
1/4 C grated carrots
1/2 C cucumber sauce (see recipe)
Let's do the Salsa (optional - see recipe)
Cucumber Sauce
1/2 C plain yogurt
1/2 C peeled, chopped cucumber
1 tsp. flax oil
1 tsp. maple syrup
1 tsp. lemon juice
1/2 tsp. sea salt Add ingredients together until mixed
well. Serve with pita pocket sandwiches or salads. |

| Slice the
pita pockets in half. Fill each pocket with 1/8 cup
chopped avocado, 2 tbs. lettuce, 1 tbs. grated carrots
and 2 tbs. cucumber sauce. Top with Salsa.
Yields: 4 servings

Add ingredients together until mixed well. Serve with
pita pocket sandwiches or salads.
