Snow White Bars

  • 1 ripe banana
  • ½ cup sunflower seed butter (or any nut butter)
  • 1/8 tsp. salt
  • ½ cup almond flour
  • ½ cup coconut flour
  • 3/4 cup shredded, unsweet coconut, divided
  • 1 tsp. vanilla extract
  • 1 chopped Enjoy Life, Rice Milk Chocolate Bar


  • 1/4 cup coconut oil, melted
  • 2 Tbsp. maple syrup
  • 1/4 cups raw cacao powder
  • 1 tsp. vanilla extract
  • Dash of salt


Preparation Instructions

Serves 9-12

  1. Blend the banana and sunflower seed butter until smooth; stir in the salt, almond flour, coconut flour and ½ cup shredded coconut until mixture is evenly moistened; add chopped chocolate bar and stir until incorporated. Press into a square baking pan.
  2. Mix coconut oil, maple syrup, cacao, vanilla and salt in a small bowl; drizzle evenly over the bars. Sprinkle remaining shredded coconut. Place in fridge until set, about 10 minutes.
  3. Store leftovers in refrigerator or freezer.
