Spring Cabbage Salad
- 1 avocado, pit and skin removed, cubed
- 1 cup red cabbage, cut into chunks
- 2 carrots
- 1 small cucumber, cut into chunks
- 1 green bell pepper, seeded and cut into chunks
- Juice of 1/2 lemon
- 1 Tbsp. extra virgin olive oil
- 1/4 tsp. salt
