| Ingredients:
2/3 lb. herb tofu cubed
1/4 cp.canola oil
1 tbsp. Spectrum Toasted Sesame Oil
1/2 head broccoli (small florets)
2 carrots (sliced at an angle)
3/4 cp. Thai Kitchen Original Recipe Peanut Satay Sauce
1/4 cp. unsalted peanuts (broken into small pieces)
1 tbsp. garlic (minced)
1/2 of lime (freshly squeezed)
1/2 tsp. Tree of Life Tamari
1/4 tsp. Frontier Crushed Red Pepper
1/2 tbsp. Ginger (finely chopped)
1 cp. snow peas |

| Cube and
brown tofu in 1/4 cp. canola oil. Cook on medium high
to high for approximately 4 minutes on each side. Remember
to heat your pan and oil before adding the tofu.
Add the following ingredients:
1. toasted sesame oil, carrots, ginger, garlic and red
pepper (wait 2 minutes)
2. snow peas and stir well (wait 2 minutes)
3. coconut milk and peanut sauce (reduce
heat and wait 1 minute)
4. peanuts, limejuice and tamari (turn
to simmer and wait 2 minutes)
5. broccoli, cover and turn off the heat
(steam broccoli) Great served over Japanese Soba or
Udon Noodles. If thicker consistency desired, add 1
tbsp. of unsalted peanut butter in step #3. |
