Broth:
Place the water into a large stock pot and bring
to a boil. Add sliced shiitakes, daikon, celery,
carrots, & onions. Turn down heat and let
simmer for 20 minutes. Add the white parts of
the green onions and simmer for 5 minutes.
Using a ladle, scoop out one cup of broth for
every 2 bowls being served. Place in a ceramic
or glass bowl and dissolve 4 tablespoons of Miso
into the broth with a whisk. Divide evenly into
two serving bowls. Garnish with a generous amount
of green onion tops.
Repeat for more servings.
