Recipes - Aaron's Favorite Miso Soup

Ingredients
10 cups Water
1 1\2 cups White Miso
6 Fresh Shiitake Mushrooms, sliced thin
1 6-inch piece Daikon Radish, cut into quarters lengthwise, then sliced into 1/4 inches
4 Stalks Celery, cut in half lengthwise, then sliced into 1\4 inches
3 Large Carrots, peeled, cut into quarters lengthwise, then sliced into 1\4 inches
1Medium Onion, halved lengthwise and cut into thin strips
4 Green onions, thinly sliced on the diagonal, separate out white parts

 

Broth: Place the water into a large stock pot and bring to a boil. Add sliced shiitakes, daikon, celery, carrots, & onions. Turn down heat and let simmer for 20 minutes. Add the white parts of the green onions and simmer for 5 minutes.

Using a ladle, scoop out one cup of broth for every 2 bowls being served. Place in a ceramic or glass bowl and dissolve 4 tablespoons of Miso into the broth with a whisk. Divide evenly into two serving bowls. Garnish with a generous amount of green onion tops.

Repeat for more servings.
