Holiday Recipes - Roast Tofurkey with Vegetables

Ingredients:
1 medium yellow onion
3 medium russet potatoes
3 carrots, scrubbed or scraped

For baste:
1/3 cup orange juice
1/3 cup soy sauce
ó cup brown sugar

 

Preheat oven to 300 degrees and remove thawed roast from plastic wrap.

Coarsely chop yellow onion, potatoes and carrots. Place roast and vegetables in roasting pan. Pour basting mixture over all.

Bake at 300 degrees, basting every 15 minutes, for 2 hours.
