Holiday Recipes - Sweet Potatoes Au Gratin

Ingredients:
6 sweet potatoes
4 cloves of garlic, crushed
3 oz Organic Valley parmesan cheese
10 oz Organic Valley heavy cream
2 Tbsp Organic Valley butter, unsalted

 

Preheat oven to 325 degrees.

Slice sweet potatoes in disks, really thin.

Butter a 9” x 12” roasting pan.

Lay sweet potatoes in the pan to cover the bottom making sure they touch, continue process until pan is full.

Push down on the potatoes to make sure they are packed in tightly.

Place heavy cream, parmesan cheese and garlic in a medium size bowl and mix well.

Pour mixture over the sweet potatoes and cover with foil.

Place in oven and bake for 45 minutes.

Take foil off and cook for another 15 minutes.

Serve warm and enjoy!
