Strawberry Coconut Mug Cake with Cashew Cream Cheese Frosting

Ingredients

Cake

  • 2 Tbsp. coconut flour
  • 1/2 tsp. baking powder
  • 1 Tbsp. maple syrup
  • 1/2 tsp. vanilla extract
  • 2 Tbsp. strawberry puree (about 2 strawberries)
  • 2 Tbsp. coconut oil, melted
  • 1 egg, NaVera Farm

Frosting

  • 1/4 cup raw cashews, soaked 3 hours
  • 2 strawberries
  • 1/8 tsp. salt
  • 1/4 tsp. vanilla extract
  • 1 tsp. lemon juice
  • 1 tsp. coconut oil, melted
  • 1-2 tsp. water (optional)

Preparation Instructions

  1. Mix all cake ingredients in a large mug until well blended; cook in microwave for 2 minutes, check and cook an additional 15 to 30 seconds, if needed.
  2. Blend frosting ingredients in a small blender until smooth, adding water 1 tsp. at a time if necessary to thin and smooth, up to 2 tsp. Cool in refrigerator for 5 minutes; top cake with frosting.
