Cinco de Mayo: Plant-Based Party Recipes!
This Cinco de Mayo, we’re going plant-based! Want in? Check out the ideas below and you’ll be turning walnuts into taco filling in no time! Pair that with cilantro lime cauliflower rice and pink kombucha margaritas and you’ll be the talk of the town come May 5th.
If you’re not sure about walnut taco meat, you’re not alone. We were skeptical until we tried it, but we’re glad we did—it’s delicious! The hearty texture of the walnuts and the classic spices like chili, cumin and paprika, actually work really well as protein-packed, plant-based taco filling. If you’re all taco-ed out, give these Sweet Potato Enchiladas a shot. (The recipe comes with a homemade Enchilada Sauce that’s super easy to make.) If you’re thinking “where’s the beef?”, we suggest this Steak Taco that doesn’t call for much more than radishes, cilantro and scallions, steak and cheese. For our friends doing Keto, consider making these one-ingredient Cheesy Taco Shells. (Can you guess the one ingredient?) Once you get the hang of making a cheese tortilla, you may never want the regular version again. Plus, if you pick up our grab-and-go blackened chicken, pico de gallo and kale salad, all you have to worry about is making the cheesy shells and assembling your tacos!

What’s a Cinco de Mayo celebration without a special drink? We love Muir Glen’s fresh take on the classic margarita! They add organic tomato juice to their recipe, so you get a gorgeous drink with a little nutritional bonus! We made the kombucha margarita (pictured here) because we felt it was our duty to test it. We can confirm that it was a hit (and it has probiotics)! We’re also big on this Tropical Smoothie from Vital Proteins. It’s non-alcoholic and super pool-side appropriate. (So really you can drink it all summer long.)
