Quick Corned Beef and Cabbage

While some corned beef and cabbage recipes are loaded with sodium (and take up to 5 hours to cook!) this Quick Corned Beef and Cabbage recipe is low on the salt and can be ready in about 45 minutes! By simply rubbing skirt steak with a vinaigrette of olive oil, vinegar, dill, mustard and pepper, you get the familiar flavor you love without all the sodium and time spent in the kitchen.

 

Vegetable Shepherd's Pie

If you’re participating in No Meat March, this recipe is for you! Lentils, potatoes, onions and mushrooms make this plant-based Shepherd’s Pie hearty and delicious. Plus, the recipe calls for 12 cups of peeled vegetables of your choosing, so you can customize it however you want!

Gluten-Free Irish Soda Bread

If you’ve never had soda bread, St. Patrick’s Day is the time to try it! The traditional Irish bread is similar to a scone, it uses baking soda as a leavening agent instead of yeast. Serve this gluten-free version hot out of the oven as an appetizer, sliced with butter and jam for breakfast or alongside your St. Patrick’s Day dinner!
