Stacks on Stacks part IV

Eat Real With Me is back with more delicious and time-saving, stackable meals and lentils take center stage! Each recipe is made with some of the same ingredients. Cook one or try cooking them as a “stack” of three to best utilize your time and budget.

Lentils don't require soaking before using, so it is easy to cook up a pot of these legumes in a short amount of time. These recipes make a great addition to your menus, especially if you are seeking out more plant-based dishes. Start with the recipe for French Lentils. After cooking that, you will be part-way toward two other meals in the stack, Arugula and Lentil Salad with Toasted Hazelnuts and Creamy Coconut Lentil Soup.

French Lentils - French lentils add a rich flavor and chewy texture to dishes and are considered a good source of protein.
Arugula and Lentil Salad with Toasted Hazelnuts - Toasted hazelnuts are a delicious complement to the peppery arugula in this salad.
Creamy Coconut Lentil Soup - Packed with flavor, this comfort food makes a tasty and quick dinner after a busy day.
