Spring Cabbage Salad

  • 1 avocado, pit and skin removed, cubed
  • 1 cup red cabbage, cut into chunks
  • 2 carrots
  • 1 small cucumber, cut into chunks
  • 1 green bell pepper, seeded and cut into chunks
  • Juice of 1/2 lemon
  • 1 Tbsp. extra virgin olive oil
  • 1/4 tsp. salt

Preparation Instructions

Serves 2

  1. Toss all veggies in a medium sized bowl with lemon, olive oil and salt.
