BBQ Pork Tenderloin

 

Ingredients

Pork Rub

  • 5 tbsp. mustard powder

  • 1 tbsp. chili powder

  • 2 tbsp. garlic powder

  • 3 tbsp. onion powder

  • 1 tbsp. cumin

  • 1 1/2 tsp. paprika

  • 1/2 c. brown sugar

  • 1/4 c. salt

  • 1/4 c. black pepper, ground

Buttermilk Dressing

  • 100 grams (3.5 oz) buttermilk

  • 30 grams (1 oz) crème fraiche

  • 3 tbsp. chives, minced

  • 1/8 tsp. cayenne

  • 1/4 tsp. salt

Johnny Cakes

  • 1 c. fine cornmeal

  • 1/4 c. all-purpose flour

  • 1/2 tsp. salt

  • 1/2 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1 egg

  • 3/4 c. buttermilk

  • 1 lb. green beans

Instructions

  1. To make pork rub, combine all ingredients and rub liberally on tenderloin to season.

  2. To make buttermilk dressing, combine all ingredients and whisk.

  3. To make Johnny cakes, combine all ingredients in a bowl and whisk until smooth. Heat sauté pan and cook until golden brown on each side.

  4. Grill the pork tenderloin until you reach internal temperature of 140 degrees and rest 15 minutes before slicing and serving.

  5. Blanch green beans in salted boiling water for about 1 minute or until tender. Shock in a bowl of ice water to stop cooking process. In a bowl, combine green beans and buttermilk dressing.  Toss until evenly coated. 

  6. Place Johnny cake on a plate, add buttermilk-dressed green beans and top with a slice of smoky pork tenderloin. Top with your favorite BBQ sauce and enjoy!
