Veggie Burger

 

Ingredients

  • 1/2 c. lentils

  • 1/2 c. brown rice

  • 2 c. shredded beets

  • 1 tbsp. minced red onion

  • 1 tsp. minced garlic

  • 1/4 c. Sunbutter

  • 1/2 - 1 c. brown rice crumbs

  • salt and pepper to taste

Preparation Instructions

  1. Cook brown rice and lentils. Allow them to cool before using.

  2. Place beets, lentils, and rice in a bowls and mix together with. Mix until you break down the lentils and rice.

  3. Add remaining ingredients and mix until everything is well incorporated.

  4. To form patties, use a scoop or eyeball the size you want. First, roll beet mixture into a ball, then flatten it out, and finally shape it into a patty.

  5. Refrigerate to allow patties to set before pan frying. You can also freeze and thaw as needed.
