Blackberry Pear Salad
2 tbsp. sugar
2 tsp. Earl Grey tea
3 c. fresh blackberries
2 tsp. Champagne vinegar
2 Asian pears, thinly sliced
Finely grind sugar and tea in a spice mill.
Purée 1 cup fresh blackberries, vinegar, and Earl Grey sugar in a food processor until smooth.
Strain through a fine-mesh sieve into a small bowl, pressing on solids; discard solids.
Arrange pears on plates; top with remaining 2 cups blackberries.
Spoon blackberry sauce over top.
