Citrus Tilapia BLT

Ingredients

  • 2 Tilapia Filets

  • 1 qt. water

  • 3 lemons – sliced in half

  • 1 limes – sliced in half

  • 3 sprigs fresh thyme

  • 6 cloves garlic

  • 1 tbsp. lemon juice

  • 1 tbsp. olive oil

  • 4 thick slices sourdough bread

  • 1 head lettuce

  • 2 large beefsteak tomatoes, sliced

  • 8 slices bacon, cooked

  • 1 avocado, sliced

  • ¼ c. mayo

  • ¼ c. sour cream

  • 2 tbsp. sriracha

  • 1 lemon, zested and juiced

  • 2 tbsp. chives, chopped

  • 1 tbsp. seafood seasoning

Instructions

  1. In a large pot, add lemons, limes, thyme and garlic to one quart of water. Bring to boil.

  1. Add the tilapia and turn the heat down so it cooks at a lazy bubble until firm, about 4 minutes. Strain and cool in the fridge.

  2. When cool, gently flake into large pieces and toss in a touch of lemon juice and olive oil.

  3. Whisk mayo, sour cream, sriracha, lemon zest and juice, chives and seafood seasoning together and set aside.

  4. Toast/Grill the sourdough bread.

  5. Brush base of bread liberally with the dressing.

  6. Top with lettuce, tomato, avocado, bacon and Tilapia.

  7. Drizzle the second piece of toast liberally with more dressing. Top and slice to serve.
