Egg in a Hole Toast with Avocado


  • 1 slice bread

  • 1 egg

  • Olive oil cooking spray

  • 1/4 avocado, sliced 

  • 1 tbsp. chopped red onion

  • 1 tbsp. nutritional yeast

  • Pinch of sea salt


  1. Lightly toast the bread in a toaster oven. Preheat a small skillet to medium-low heat; spray with cooking spray. 

  2. Using a shot glass or other small container, cut a hole in the bread using the open side of the glass.  Place the toast in the heated skillet and crack the egg in the hole. 

  3. Cover and cook for 3-4 minutes or until egg reaches desired firmness.

  4. Remove toast and egg from pan; place a few slices around the outside of the toast. Using a knife, gently spread the avocado evenly. 

  5. Top with a few slices of red onion, sprinkle nutritional yeast, and pinch of sea salt.
