Key Lime Coconut Energy Bites
1/2 cup finely chopped almonds
1/2 cup finely chopped cashews
1 1/2 cups chopped pitted dates
3 key limes
2 scoops Whole Earth & Sea Protein & Greens powder
1/2 cup shredded or flaked coconut
Vegan chocolate, melted (if desired)
Use a lemon juicer to juice the key limes and add the juice to a food processor. Using a zester, grate all three limes and add the zest to the food processor.
Add both finely chopped nuts, Whole Earth & Sea Protein & Greens powder and dates to the food processor and pulse until the ingredients are combined and start to stick together.
Remove the mixture from the food processor and shape into 1 or 2 inch balls.
Roll each ball in your choice of coconut or melted chocolate.
