2 lbs. organic baby carrots
2/3 c. organic brown sugar
1 - 2 tsp. orange juice
1/2 tsp. salt (optional)
1/4 c. Earth Balance margarine
Additional 1/2 tsp. salt
Heart 1-inch water to boiling in a 3-quart saucepan.
Add carrots (and salt if desired).
Cover and heat to boiling.
Reduce heat and simmer until carrots are tender.
In a 10-12 inch skillet, heat brown sugar, margarine, organic juice and 1/2 tsp. until sugar is dissolved and mixture is bubbly, being careful not to scorch.
Remove from heat.
Drain carrots and stir into sugar mixture in pan.
Cook over low heat for approximately 5 minutes until carrots are glazed and hot.
