Healing Vegan Bone-less Broth
1 in. knob fresh turmeric, peeled and rough chopped
1 in. knob fresh ginger, peeled and rough chopped
5 cloves garlic, crushed
1 parsnip, chopped
2 carrots, chopped
1 onion, chopped
1 red bell pepper, seeded and chopped
4 stalks celery, chopped
1 c. sliced mushrooms
4 large kale leaves, torn
2 bay leaves
2 thumb sized pieces of kombu or arame (sea vegetable)
1 tbsp. coconut oil
1/4 c. liquid aminos or coconut aminos
16 c. filtered water
Handful fresh chopped parsley
Juice of 1 lemon
Add turmeric, ginger, garlic, parsnip, carrots, onion, pepper, celery, mushrooms, kale, bay leaves, kombu, coconut oil, liquid aminos and water to a large stock pot.
Bring to a low boil, reduce, heat, cover and simmer for 1 hour.
Remove from heat; stir in parsley and lemon juice; let cool, strain out the solids for compost, and enjoy.
