Holiday Sweet Potatoes


  • 1 10oz bag of Dandies Mini Marshmallows

  • 2 sweet potatoes — cut in half inch slices

  • 5 tbsp. vegan butter

  • 1/4 c. brown sugar

  • 1/2 tbsp. smoked paprika

  • 1/4 tsp. ground clove

  • 1/4 tsp. cinnamon

  • 1/4 tsp. allspice

  • salt and pepper to taste

Preparation Instructions

  1. Preheat oven to 400 degrees.

  2. In a small bowl, mix together sugar and spices.

  3. Layer the sweet potato slices in a baking dish and sprinkle the spice mixture on top.

  4. Drop the Tablespoons of margarine over the sweet potatoes and stir with a spatula.

  5. Cover with foil and bake for 40 minutes.

  6. Poke potatoes with a fork to make sure they are tender.

  7. Remove foil and sprinkle on Dandies Marshmallows.

  8. Bake for an additional 5-10 minutes until the Dandies begin to puff up and turn golden.

  9. Enjoy!
