  • 10-20 baby potatoes
  • ½-3/4 c. green
  • onions, chopped
  • ½-3/4 c. coconut bacon
  • 1 c. cashew sour cream
  • (separate recipe available)
  • salt/pepper to taste 

Optional Toppings

  • FreshJax Southwest Seasoning
  • Zen Butcher Creamy Cheese
  • hot sauce/Sriracha sauce

Cashew Cream

  • 1 c. cashews
  • 1 - 2 c. water
  • 1 Tbsp. apple cider vinegar
  • pinch of salt

Preparation Instructions

  1. Steam or bake potatoes until they are able to be pierced with a fork.
  2. Place cashews in high-powered blender* along with other ingredients and fill with water right to cashew line. Process until smooth. Add more water until you reach desired consistency for sauce.
  3. Once potatoes are done, slice down the middle and top with preferred toppings. Drizzle hot sauce or sriracha for some heat as desired.
