Potato-Vegetable Latkes

 

Ingredients

  • 2 large organic potatoes

  • 2 medium-sized organic zucchinis

  • 2 large organic carrots

  • 2 large organic onion

  • 2 Organic Valley, Omega-3 eggs, beaten

  • 1/8 tsp. fresh ground black pepper

  • 1/2 tsp. salt

  • 3/4 c. matzoh meal

  • canola oil for frying

Preparation Instructions

  1. Peel potatoes and carrots and place in cold water.

  2. Using a food processor (or grate by hand), grate potatoes, zucchini, carrots and onions. Make sure to use the pulse feature, if using food processor, so vegetables do not puree.

  3. Mix grated vegetables, beaten eggs, salt and pepper.

  4. Stir in matzoh meal.

  5. Using 1 -2 tbsp. of mixture, shape into pancake.

  6. Fry latkes in 2 tbsp. hot oil, approximately 1 - 2 minutes each side.

  7. Drain on paper towels.

  8. Add additional oil if necessary.
