Pound Cake with Yogurt and Berries
1 c. yogurt
1 c. softened unsalted butter
3 c. sugar
1 tsp. vanilla extract
1 tsp. lemon extract
3 c. cake flour
¼ tsp. baking soda
Turn oven to 350ºF.
Mix butter and sugar with electric mixer until the mixture is pale yellow.
Turn mixer to low speed and add eggs one at a time.
Add extracts, and slowly add flour and baking soda until thoroughly mixed.
Mix in yogurt.
Coat a 9"x13" metal cake pan with nonstick spray.
Pour batter into pan and bake at 350ºF for 45 minutes, or until golden brown.
Take out and let cake completely cool.
Top cake with yogurt and fresh berries.
