Spaghetti Aglio e Olio
1 (8 oz) package Ancient Harvest™ Supergrain Pasta® Spaghetti
2 garlic cloves
1 tbsp. Olive Oil
1/2 c. toasted pine nuts
Red pepper flakes, to taste
1/4 c. grated Parmesan cheese
Salt and pepper to taste
1 handful fresh basil, roughly chopped or ripped
Boil the pasta according to package directions. Drain, reserving 2-4 tablespoons of the starchy cooking water.
Heat olive oil over medium heat in a saute pan. Add the sliced garlic and saute until just barely brown. Add the red pepper flakes and pine nuts and stir in the cooked pasta. Stir in the Parmesan cheese and add cooking water until the desired sauce consistency is reached. Season with salt and pepper to taste.
Top with the chopped basil and serve.
