Quinoa Salad Pita

 

Ingredients

  • 1 organic pita pocket
  • 1/2 c. cooked quinoa
  • 2 Lacinato kale leaves, chopped
  • 1/4 c. chopped red cabbage
  • 2 tbsp. chopped red onion
  • Garlic powder, salt and pepper, to taste

Dressing

  • 2 tbsp. hummus
  • 1 tbsp. vegan mayo
  • 1 tsp. Dijon mustard

    Preparation Instructions

    1. Split the pita pocket in half and set aside.
    2. Mix the quinoa, kale, cabbage, onion, salt and pepper in a medium bowl.
    3. Mix the dressing ingredients in a small bowl; spoon over quinoa mixture and toss well. 
    4. Stuff half in each pita pocket.
