Roasted Tomato Soup

Ingredients

  • 1 onion, quartered

  • 4 peeled garlic cloves

  • 1/2 tsp dried thyme

  • 1/2 tsp dried oregano

  • 1 tsp kosher salt

  • 1 tsp black pepper

  • 1/2 c. water

Instructions

  1. Halve the tomatoes, reserve the juice.

  1. Place the tomatoes, white onion, garlic cloves, dried thyme, oregano, salt and pepper in a baking dish.

  2. Bake at 375 degrees F for 35 minutes.

  3. Puree all ingredients in a blender.

  4. Add reserved tomato juice and water.

  5. Enjoy!
