Roasted Tomato Soup
2 14.5 oz cans of Muir Glen Organic Whole Peeled Tomatoes
1 onion, quartered
4 peeled garlic cloves
1/2 tsp dried thyme
1/2 tsp dried oregano
1 tsp kosher salt
1 tsp black pepper
1/2 c. water
Halve the tomatoes, reserve the juice.
Place the tomatoes, white onion, garlic cloves, dried thyme, oregano, salt and pepper in a baking dish.
Bake at 375 degrees F for 35 minutes.
Puree all ingredients in a blender.
Add reserved tomato juice and water.
