Shrimp, Mango and Avocado Tacos



  • 2 tbsp. canola oil
  • 1 lb. shrimp, peeled and deveined
  • 2 garlic cloves, sliced
  • 2 tsp. cumin seeds, lightly toasted and ground
  • 1 large mango, finely chopped
  • ¼ c. chopped cilantro
  • 4 to 5 tbsp. lime juice
  • Tortillas of your choice
  • Salt and pepper to taste

Taco Sauce

  • 1/2 avocado
  • 1/2 c. sour cream
  • 2 tbsp. cilantro
  • 1 tsp. sriracha
  • 1 tbsp. lime juice
  • Salt and pepper to taste

    Preparation Instructions

    1. Heat a large pan at medium-high heat. Add the canola oil.
    2. Once the oil is hot, add the garlic and the shrimp.
    3. Stir until the shrimp begins to change color.
    4. Add the cumin, and continue to cook until the shrimp is pink.
    5. Add the mango and cilantro.
    6. Add the lime juice, and remove from the heat. 
    7. Add all sauce ingredients together in a blender. Blend sauce and serve with tacos.
    8. Serve shrimp and mango base on your tortilla of choice. Top with avocado, cilantro, taco sauce and lime.
