Spicy Curry Snack Mix

Ingredients

  • 3/4 c. butter, melted

  • 1/2 c. turbinado sugar

  • 1/2 c. agave syrup

  • 4 tsp. curry powder

  • 1 tsp. ground cumin

  • 1 tsp. fine sea salt

  • 1/2 tsp. ground ginger

  • 1/4 tsp. cayenne pepper

  • 5 c. Cascadian Farm™ Organic Multi Grain Squares

  • 2 tbsp. black sesame seed

  • 1 1/2 c. roasted and salted whole cashews

  • 1 c. chopped dried apricots

  • 1 c. dried cranberries

Instructions

  1. Heat oven to 250°F.

  2. Line a baking sheet with parchment paper.

  3. In small bowl, mix melted butter, brown sugar, agave, curry powder, cumin, salt, ginger and red pepper; blend well.

  4. Place cereal in large bowl.

  5. Pour butter mixture over cereal; stir to coat well.

  6. Add the spice mixture and sesame seeds and mix gently to combine, stirring cautiously to avoid breaking the cereal.

  7. Spread on baking sheet.

  8. Bake 1 1/2 hours, stirring every 15 minutes.

  9. Cool completely, about 30 minutes. Carefully loosen from cooking parchment paper, and break into large chunks.

  10. Add cashews, apricots and cranberries; toss to combine. Store in airtight container.
