Stuffed Delicata Squash


  • 2 small delicata squash

  • 2 c. Sage Turkey Stuffing*

  • 1/2 tsp. nutmeg

  • 1/4 c. fresh grated Parmesan cheese

  • 2 tbsp. fresh parsley, chopped

    *If cooking the “stack” of 3 meals, you will have this leftover from Sage Turkey Stuffing with Cinnamon Sweet Potatoes


  1. Preheat oven to 425°.

  2. Cut delicata squash in half lengthwise. Scoop out the seeds and loose strings using a spoon. Place squash halves in a small baking dish. Add about 1/4 cup water around the outside of the squash.

  3. Add stuffing to a medium bowl. Sprinkle nutmeg and Parmesan cheese over the top, then stir to combine. Stuff each squash with this mixture, then top squash halves with additional Parmesan cheese.

  4. Bake until squash is tender, about 30 minutes. Garnish with fresh parsley and enjoy. Serves 2 if cooking the “stack” of 3 meals. Serves 3-4 if cooking this meal only.
