Sweet Potato Casserole

Ingredients

  • 3 - 4 medium sweet potatoes

  • 6 tbsp. butter

  • 6 tbsp. organic brown sugar

  • 6 tbsp. orange juice

  • 6 tbsp. Bourbon or Rum

  • 1/2 tsp. organic ground cinnamon

  • 1/2 tsp. organic nutmeg

  • 1/2 tsp. ground gloves

  • 1/2 c. pecans, roughly chopped

Preparation Instructions

  1. Preheat oven to 325.

  2. Boil sweet potatoes until fork tender.

  3. Drain and cool enough to remove skins.

  4. Roughly mash sweet potatoes.

  5. Combine the rest of the ingredients, except pecans, with the sweet potatoes. and mix well

  6. Pour mixture into 9 x 12 baking dish and top with pecans.

  7. Bake for 25 min.
