Fresh Veggie and Watermelon Salad


  • 3 or 4 medium tomatoes, cubed

  • 1 cucumber, peeled, and cubed

  • 1 c. watermelon, cubed

  • 1 avocado, cubed

  • 1 tbsp. chopped mixed fresh herbs (basil, tarragon, chives, and/or cilantro)

  • 1/4 tsp. coriander seed

  • 3 tbsp. olive oil

  • 3 tbsp. aged balsamic vinegar

  • salt and freshly ground black pepper


  1. In a bowl, combine the tomatoes, cucumber, watermelon, avocado, and herbs.

  2. In a spice grinder, grind the coriander seeds to a fine powder.

  3. Add the ground coriander to the tomato mixture and toss.

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, and salt and pepper to taste.

  2. Pour over the tomato mixture and toss to coat.

  3. Adjust the seasoning to taste.

  4. Enjoy!
