  • 1/2 tsp. vanilla extract
  • 1/4 cup cane sugar
  • 1/4 cup plus 2 Tbsp. tapioca flour
  • 1 tsp. French Vanilla Vega One Powder
  • 1 (20 oz.) can crushed pineapple with juice
  • 1 (8 oz.) container So Delicious CocoWhip, thawed
  • 2 cups vegan mini marshmallows
  • 1 cup Let’s Do...Organic Coconut Flakes
  • 1/2 cup chopped pecans

Preparation Instructions

  1. Mix vanilla extract and sugar well, creating vanilla sugar.
  2. In a large mixing bowl, whisk together the tapioca flour, powder, and vanilla sugar. *Alternatively, 1 (3/4 oz.) packet of vegan vanilla pudding mix may be used in place of the tapioca our and powder.*
  3. Add the crushed pineapple and juice and stir.
  4. Gently fold in the CocoWhip, marshmallows, coconut flakes, and pecans.
  5. Stir until just combined.
