Veggie Pesto Mac and Cheese
½ c. of frozen peas
½ bunch of fresh asparagus, cut into ½ inch pieces
Drizzle of olive oil for cooking
2 c. fresh basil
2-3 cloves of garlic
½ c. olive oil
⅓ c. pine nuts
Salt and pepper, to taste
Prepare mac & cheese according to the directions on the box.
While the pasta is cooking, bring a pan to medium heat and sauté asparagus and peas in olive oil. Set aside.
Make the pesto by blending basil, garlic, olive oil and pine nuts in a food processor until smooth. Add salt and pepper to taste.
When the mac & cheese is ready, mix in the pesto and vegetables!
