Veggie Pesto Mac and Cheese


  • ½ c. of frozen peas

  • ½ bunch of fresh asparagus, cut into ½ inch pieces

  • Drizzle of olive oil for cooking

  • 2 c. fresh basil

  • 2-3 cloves of garlic

  • ½ c. olive oil

  • ⅓ c. pine nuts

  • Salt and pepper, to taste


  1. Prepare mac & cheese according to the directions on the box.

  2. While the pasta is cooking, bring a pan to medium heat and sauté asparagus and peas in olive oil. Set aside.

  3. Make the pesto by blending basil, garlic, olive oil and pine nuts in a food processor until smooth. Add salt and pepper to taste.

  4. When the mac & cheese is ready, mix in the pesto and vegetables!
